Maslenitsa (Maslenitsa, Kolodiy) is a folk holiday of seeing off winter and welcoming spring. It is celebrated for a whole week, during which pancakes are baked and dumplings are cooked with cheese, butter and sour cream. Pancakes were baked throughout Maslenitsa - in honor of the Slavic sun god Yaril, and at the end of the celebration they burned an effigy - Mara, symbolizing the death and birth of nature. The week should start with baking pancakes.
Ingredients:
250-300 g flour
500 ml warm water
2 eggs
2 tbsp mayonnaise or sour cream
1 tbsp Sahara
2-3 pinches of salt
4 - 5 tbsp. oils
vanilla sugar optional
Cooking:
Pour warm water, beat in eggs, add mayonnaise or sour cream, salt, sugar, beat with a mixer or whisk. In several stages, add the sifted flour, mix well and pour in the oil, mix. Vanilla sugar can be added if desired.
The dough should rest for 10-15 minutes. Grease the pan before the first pancake with butter or a piece of lard. Pour a thin dough into a well-heated pan and bake until golden brown. Pancakes are tasty and thin.
